This dish combines the sweet flavour of apricots and the salty tang of prosciutto.

Ingredients:

4 skinless chicken breast fillets, trimmed (approx total 600g)

1 pinch salt and cracked black pepper

8 slices prosciutto

1/4 cup salt-reduced chicken stock

2 Tbsp olive oil

6 apricots, cut into thick wedges

2 cup baby spinach leaves, to serve


Directions:

Preheat oven to 200 degrees Celcius. Sprinkle chicken with salt and pepper and wrap each fillet with two slices prosciutto.

Place the chicken stock and oil in a baking dish. Add chicken and bake for 12 minutes.

Add apricots and continue cooking for 8-10 minutes or until chicken is cooked through and apricots are tender. Serve with baby spinach and pan juices.
