Ingredients:4 skinless chicken breast fillets, trimmed (approx total 600g) 1 pinch salt and cracked black pepper 8 slices prosciutto 1/4 cup salt-reduced chicken stock 2 Tbsp olive oil 6 apricots, cut into thick wedges 2 cup baby spinach leaves, to serve Directions:Preheat oven to 200 degrees Celcius.
