Ingredients:
4 chicken breast fillets
1/4 cup orange juice
1 mango, peeled and diced (for salsa)
2 bananas, peeled and sliced (for salsa)
1 tsp finely grated ginger (for salsa)
2 tsp soy sauce (for salsa)
4 spring onions, chopped (for salsa)
1/4 cup finely sliced coriander leaves (for salsa)
2 Tbsp lemon juice (for salsa)
Directions:Place chicken in pan with orange juice. Cook for about 3 - 4 minutes on each side, or until cooked through.
To make salsa, combine all ingredients in a serving bowl. Mix well. Can be heated gently or served at room temperature.
Serve chicken topped with mango salsa.
