This tasty combination of chicken, corn and pumpkin makes a quick and easy dinner idea.

Ingredients:
2 Tbsp olive oil
1 Tbsp French mustard
1/2 cup lemon juice
1 freshly ground black pepper, to taste
4 skinless chicken breast fillets
1 cup fresh corn kernels
2 cup steamed pumpkin cubes
1 bunch English spinach, washed and stems removed
4 semi-dried tomato halves
Directions:
Combine 1 tablespoon of olive oil, mustard, lemon juice and black pepper in a small bowl. Brush over chicken. Heat a large pan over medium heat.
Cook chicken until juices run clear. Remove and keep warm.
Add remaining oil to pan and add corn and pumpkin. Stir-fry 2 minutes. Add spinach. Stir-fry 1 minute. Arrange corn and pumpkin mixture on individual plates. Top with a piece of chicken and a tomato half.
