Chicken and Rice Noodles

Ingredients:

1 Tbsp oil

1 onion, finely chopped

2 garlic cloves, crushed

1 carrot, peeled and diced

1 cup frozen beans

1 cup shredded cabbage

1 packet (45g) chicken noodle soup

2 cup chicken stock or water

250 g rice noodles

1 tsp soy sauce

1 barbecue chicken, skin removed, flesh shredded


Directions:

Heat oil in a large frying pan or wok. Saute onion and garlic for 1 minute. Add carrot, beans and cabbage. Cook, stirring, for 2 - 3 minutes or until cabbage is wilted.

Stir through soup mixture and chicken stock. Bring to the boil. Break rice noodles into the cabbage mixture. Reduce heat. Simmer 5 - 7 minutes until noodles are cooked.

Add soy sauce and chicken. Toss and serve immediately.

Variations:

You can replace the chicken with duck or pork.
