Toasted macadamia nuts add a divine flavour to stir-fried chicken and asparagus.

Ingredients:

1 bunch fresh asparagus spears, cut into 3cm pieces

30 g unsalted macadamia nuts

350 g sliced chicken breast

1/2 cup sweet chilli sauce*

2 cloves garlic, crushed

1 1 x 4cm piece ginger, peeled & grated

1 bunch coriander, chopped


Directions:

Place macadamias in wok over medium heat and stir-fry until toasted. Add sweet chilli sauce and cook until sauce begins to caramelise.

Add garlic and ginger and stir-fry for 1 minute.

Add chicken, stirring thoroughly to ensure all pieces are well coated with sauce.

Add asparagus and cover wok with lid for 5 minutes until chicken is cooked through. Stir through coriander and serve.

Variations:

Serve on a bed of rice, if desired. Other vegetables can also be added to this dish, such as sliced red capsicum, carrot sticks, broccoli florets, and any other favourite vegetables.
