Chicken and Asparagus Stir-Fry

Toasted macadamia nuts add a divine flavour to stir-fried chicken and asparagus.
1 bunch fresh asparagus spears, cut into 3cm pieces
30 g unsalted macadamia nuts
350 g sliced chicken breast
1/2 cup sweet chilli sauce*
2 cloves garlic, crushed
1 1 x 4cm piece ginger, peeled & grated
1 bunch coriander, chopped
Place macadamias in wok over medium heat and stir-fry until toasted. Add sweet chilli sauce and cook until sauce begins to caramelise.
Serve on a bed of rice, if desired. Other vegetables can also be added to this dish, such as sliced red capsicum, carrot sticks, broccoli florets, and any other favourite vegetables.
