Stir-fried Hokkien noodles with chicken and choy sum with a touch of green curry.

Ingredients:

1 packet Hokkien noodles

2 Tbsp oil

1 Tbsp green curry paste

300 g chicken thighs, cubed

1 bunch choy sum, washed

1 bunch spring onions, trimmed and sliced

1/2 cup coconut milk, light


Directions:

Cook Hokkien noodles according to directions on the packet. Heat oil in a wok over medium heat. Add curry paste and cook for 2 minutes. Add chicken cubes, cook for 5 minutes or until golden brown.

Cut choy sum into serving size pieces and add to wok along with spring onions. Cook for 2 minutes. Add coconut milk, bring to simmering point. Serve with noodles.

Variations:

Delicious with a sprinkling of roasted cashew nuts. Serving suggestion not included in nutritional inforamtion.

This is a nice recipe... I swapped the green curry paste to red curry paste. Very tasty and with the red curry paste it made it a bit spicy, which I loved. I would make this again.
