These juicy marinated chicken breasts make a tasty meal.

Ingredients:

2 medium Delaware potatoes

4 chicken breasts

1/4 cup reduced-salt soy sauce

1/2 lemon, juiced

1/4 cup olive oil

1/2 Tbsp oregano

1/2 tsp garlic powder

1 freshly ground black pepper


Directions:

Combine marinade ingredients. Mix well. Pour over chicken and allow to stand for 1 hour.

Leaving the skin on, cut potatoes into 2cm cubes. Microwave in salted water for 5 minutes and thread onto skewers.

Cook the potato skewers on the barbecue for 10 minutes, basting occasionally with the chicken marinade. Place the chicken breasts on the barbecue and cook for 10-15 minutes, basting frequently.

Variations:

Served with a fresh green salad. Serving suggestion not included in nutritional information.
