Yield: 6 x parcels

Tender, moist parcels of chicken.

Suggestions:

Serve with a tossed salad.

Ingredients:

6 chicken pieces

6 springs of parsley

1 tsp lemon rind, grated

600 g button mushrooms

1/2 tsp salt

1/2 tsp pepper


Directions:

Preheat oven to 190°C (moderate).

Place chicken pieces on separate, lightly greased pieces of foil.

Sprinkle with salt and pepper. Top each with a spring of parsley and lemon rind.

Divide mushrooms between chicken. Wrap up, enclosing chicken. Place parcels on a baking tray and cook in oven 40 minutes.

Open parcels a little and cook for a further 15-20 minutes to allow chicken to brown.

Variations:

Use skinless chicken breasts to reduce fat and cholesterol.
