Try this delicious and simple chicken stir-fry with fresh asparagus!

Ingredients:
1 Tbsp olive oil
2 cloves garlic, crushed
1 freshly ground black pepper
1 Tbsp seeded mustard*
2 skinless chicken thighs, cut into 3cm pieces
3 bunches asparagus spears, woody base removed
1 red capsicum, cubed
4 spring onions, sliced
4 baby squash, quartered
1 Tbsp lemon juice
Directions:
Cut asparagus stalks into 3 - 5cm lengths. Heat oil in wok. Add garlic, pepper and mustard. Cook for a few seconds. Add chicken and cook until golden brown. Remove and keep warm.
Add extra 1 tablespoon oil. Stir-fry vegetables for 3 - 4 minutes. Return chicken to reheat for 1 minute. Add lemon juice. Serve with rice or noodles, if desired.

By: bethla - 2012-01-19 This was great, something just a little bit different & didn''t taste too plain like a lot of healthy meals. I used 4 chicken thigh instead of 2, & cut the squash into smaller pieces which worked really well. Lovely dish, the thighs were a good idea instead of using chicken breast. Will make it again thanks.
