Soy Oat Waffles

Nutty flavoured waffles with lots of fibre.

Suggestions:

Serve with fresh fruit or fruit sauce.

Ingredients:

1 cup soy beans

1 1/4 cup rolled oats

1 2/3 cup water

2 tsp canola oil


Directions:

Soak soy beans overnight in water to cover.

Preheat waffle iron.

Drain water from soy beans and combine all ingredients in a blender and blend until light and airy.

Pour into waffle iron and cook for 15-20 minutes at medium setting. Let stand for 15 minutes, then carefully open the iron.

Serve hot.

Variations:

Can replace dried soy beans with canned beans and omit overnight soaking.
