This exotic dish makes a refreshing finish to a summer meal, or even a sweet treat for brunch.

Ingredients:

4 large ripe peaches

3 - 4 teaspoons rosewater

2 Tbsp caster sugar

1/2 tsp ground cinnamon

1 bunch of fresh mint leaves


Directions:

Wash the peaches. Cut each peach in half around the crease to the stone. Twist halves in opposite directions to separate them. Remove stones with a teaspoon.

Slice flesh into a serving bowl. Combine sugar and cinnamon in a small bowl. Sprinkle peaches with rosewater and cinnamon sugar and combine gently. Cover with plastic wrap and chill.

Stir gently and garnish with fresh mint leaves just before serving.

Variations:

Delicious served on its own, or with low-fat yoghurt or low-fat ice cream. Serving suggestions not included in nutritional information.
