A delicious muesli for breakfast, sprinkled over yoghurt or eaten on it's own as a quick snack on the go.

Ingredients:

3 cup rolled oats

1 tsp cinnamon

1/2 tsp baking powder

1/2 tsp salt

1/4 cup canola oil, light

2 egg whites

1/2 cup Splenda or sugar substitute

60 g craisins (dried cranberries), optional


Directions:

Mix wet ingredients together. Add to the dry mix.

Spread mixture onto a baking tray. Bake for 30 minutes at 175°C.

If using, mix through craisins after baking.

Variations:

Portioning the muesli into single-sized servings using ziplock bags or containers (2/3 cup per serving) makes it quick and easy when you're in a hurry.
