Ingredients:

8 slices sourdough bread

2 ripe avocados

2 ripe Packham pears, quartered, cored and sliced

1 cup baby rocket leaves, washed

80 g shaved parmesan

1 pinch freshly ground black pepper, or to taste

8 lemon wedges, to serve


Directions:

Lightly toast the sourdough bread, if desired. Roughly mash 1/4 of an avocado onto each slice and season with a pinch of salt.

Top with slices of pear, rocket leaves and shaved parmesan. Grind over black pepper and serve with lemon wedges.
