A hot, sweet treat for breakfast, or for a snack.

Ingredients:

4 tsp apricot fruit spread

1/4 cup ricotta cheese

4 slices raisin or fruit bread

1 banana, sliced

1/2 tsp cinnamon, for sprinkling


Directions:

Combine fruit spread and ricotta and spread over 2 slices of bread.

Top with banana, sprinkle with cinnamon and top with remaining slice of bread. Cook in a sandwich maker until toasted and warmed through.

Variations:

Alternatively toast on both sides under a grill until golden.
