Enjoy the taste of summer with this cooling drink.

Ingredients:

2 large mangoes, peeled, seeded and roughly chopped

1 tsp grated lemon rind

1/2 lemon, juiced

500 g diet yoghurt

2 tsp honey

1 pinch of ground cardamon (optional)

3/4 cup low-fat milk or water

1 handful of ice cubes

4 mint leaves


Directions:

Prepare the mangoes by slicing off the cheeks and scooping out the flesh with a spoon. Roughly chop and place into a blender or food processor with remaining ingredients, except the ice and mint leaves.

Combine all ingredients in a blender or food processor and blend for 30 seconds or until creamy smooth.

Place ice cubes into four tall glasses and pour mango cooler over the top. Garnish with a mint leaf.
