Ingredients:

2 lean rashers bacon, chopped

800 g oyster blade steak, cubed

2 cloves garlic, crushed

1 1/2 Tbsp flour

1 cup red wine

4 ripe tomatoes, chopped

1 Tbsp tomato paste, no added salt

1 freshly ground black pepper

8 small whole onions, peeled

1 Tbsp fresh rosemary leaves

2 cup sliced mushrooms

4 sprigs of chopped parsley, to garnish

1 coating of olive oil spray


Directions:

Sauté bacon in a non-stick frying pan until lightly browned. Transfer to a casserole dish.

Spray frying pan with olive oil spray, add meat to the pan and quickly brown on each side. Transfer to the casserole dish.

Sauté garlic for 2 minutes and then sprinkle in the flour. Stir well. Add wine. Stir constantly until thickened and bubbling. Stir in tomatoes, tomato paste and pepper. Pour the sauce over meat in the casserole dish.

Cover and cook in a moderately slow oven (160șC) for 30 minutes. Add the whole onions, rosemary and mushrooms. Cover and cook a further 1 hour or until the meat is tender. Sprinkle with chopped parsley before serving.

Very easy to prepare and very tasty. Even the kids liked it. Nicer if you have enough calories to have a wholemeal bread roll with it.
