Ingredients:
2 coats of olive oil spray
4 medium size rump steaks, trimmed of all fat (about 150g each)
1 onion, chopped
1 clove garlic, crushed
3 cup sliced mushrooms
2 Tbsp tomato paste, no added salt
1/2 cup red wine
5 1/4 oz sour cream, extra light
1 Tbsp fresh parsley, chopped
1 freshly ground black pepper to taste
Directions:
Heat a large non-stick frying pan and spray with olive oil. Add steaks. Cook until golden brown on both sides, turning once. Transfer to a plate.
Sauté onion and garlic in remaining oil until onion is tender. Stir in mushrooms. Cook for about 3 minutes.
Blend in tomato paste, wine, sour cream and pepper. Reduce heat.
Return meat to pan. Simmer for about 5 minutes. Add parsley.
Serve with potatoes and a fresh green salad.
