Lasagne - with a difference! Layers of Royal Blue potatoes with Italian tomato sauce and cacciatore sausage.
1 kg Royal Blue potatoes, thinly sliced
1 Tbsp chopped parsley
1 Tbsp chopped oregano
1 Tbsp chopped thyme
100 g sliced and pitted black Kalamata olives
1 small onion, thinly sliced
1 salt and freshly ground black pepper
1 jar Italian tomato sauce
1 Cacciatore sausage, sliced lengthways
Place potato slices in a large mixing bowl, adding herbs, olives, onion and a little salt and pepper. Mix well. Oil a ceramic baking dish then place a thin layer of potato mixture on the bottom.
