Lasagne - with a difference! Layers of Royal Blue potatoes with Italian tomato sauce and cacciatore sausage.

Ingredients:

1 kg Royal Blue potatoes, thinly sliced

1 Tbsp chopped parsley

1 Tbsp chopped oregano

1 Tbsp chopped thyme

100 g sliced and pitted black Kalamata olives

1 small onion, thinly sliced

1 salt and freshly ground black pepper

1 jar Italian tomato sauce

1 Cacciatore sausage, sliced lengthways


Directions:

Place potato slices in a large mixing bowl, adding herbs, olives, onion and a little salt and pepper. Mix well. Oil a ceramic baking dish then place a thin layer of potato mixture on the bottom.

Spread Italian sauce on top and lay strips of sausage over the sauce. Repeat process until all mixture is used.

Cover tray with tinfoil. Cook for 1 hour 15 minutes at 180°C. Serve with green vegetables or salad, if desired.
