Potato Crusted Meatloaf

Ingredients:

1 cup fresh breadcrumbs

1/2 cup onion, finely chopped

1/2 cup grated parmesan cheese, reduced-fat

1 Tbsp chopped fresh basil

2 eggs, lightly beaten

2 cloves garlic, crushed

500 g lean beef mince

1/3 cup tomato sauce

1 Tbsp Worcestershire sauce

500 g Royal Blue potatoes, peeled, chopped and cooked (for topping)

1/4 cup skim milk (for topping)

1 salt and freshly ground black pepper


Directions:

Combine all ingredients (except potatoes and milk) in a large bowl and mix well. Spoon mixture into a loaf tin. Bake in a preheated 200°C oven for 30 minutes or until meatloaf is browned all over. Mash potato with milk and spread over meatloaf. Bake a further 15 minutes to brown the potato topping. Serve immediately.

Forgot to mention, make sure you really kneed the meat/ingredients to make it firmly pushed together, mine couldn''t hold it''s shape & was too loose.

For a healthyish meal this is really good. It actually tastes exactly like a sausage roll & we dolloped tomato sauce over the top which helped a lot. Quite large servings which was great (nice to feel so full for a change when calorie counting)! I reckon you could add a grated up carrot to this & you wouldn''t notice the difference. Great dish, quick & easy to prepare, will make again. 4 stars

Made it tonight and it was a great success with my family, hard to believe it is diet friendly
