Glazed Riverina Meat Loaf

Meatloaf with a sweet chutney glaze.

Suggestions:

Serve with baby squash and steamed asparagus.

Ingredients:

4 1/2 cup cooked Sunwhite Calrose rice

750 g lean minced topside mince

1/4 cup beef stock

1 Tbsp soy sauce, salt reduced

1 Tbsp tomato sauce, salt reduced

1 apple, peeled and grated

1/2 cup sultanas (75g)

1/2 cup lowfat cottage cheese

1 egg, beaten

30 g reduced fat margarine

1 Tbsp sultanas, extra

1 red apple, chopped

2 Tbsp tomato sauce, salt reduced (for glaze)

1 Tbsp brown sugar

2 Tbsp vinegar

1 tsp sweet fruit chutney


Directions:

Combine 1 1/2 cups of the cooked rice with meat, stock, soy sauce, tomato sauce, grated apple, sultanas, cottage cheese and beaten egg. Spoon into lightly greased loaf pan.

Glaze: Blend together 2 tablespoons tomato sauce, brown sugar, vinegar and chutney and spoon 1 tablespoon over meat loaf. Bake in a moderate oven (180°C) for about 1 hour. Stand for 5 minutes, then turn onto a serving plate.

Heat margarine; stir in remaining rice, extra sultanas and chopped apple. Cook 2-3 minutes or until heated through. Surround meat loaf with rice mixture. Heat remaining glaze and spoon over.
