
Glazed Riverina Meat Loaf

Ingredients:4 1/2 cup cooked Sunwhite Calrose rice 750 g lean minced topside mince 1/4 cup beef stock 1 Tbsp soy sauce, salt reduced 1 Tbsp tomato sauce, salt reduced 1 apple, peeled and grated 1/2 cup sultanas (75g) 1/2 cup lowfat cottage cheese 1 egg, beaten 30 g reduced fat margarine 1 Tbsp sultanas, extra 1 red apple, chopped 2 Tbsp tomato sauce, salt reduced (for glaze) 1 Tbsp brown sugar 2 Tbsp vinegar 1 tsp sweet fruit chutney Directions:Combine 1 1/2 cups of the cooked rice with meat, stock, soy sauce, tomato sauce, grated apple, sultanas, cottage cheese and beaten egg.
