If you enjoy stir-fries, you will love this Asian-style dish with crunchy snow peas!

Ingredients:

1 Tbsp olive oil, extra light

1 onion, sliced

1 clove garlic, crushed

1 tsp grated fresh ginger

185 g snow peas, trimmed

400 g lean rump steak, cut into strips

1/2 red capsicum, sliced

3 Tbsp dry white wine (for sauce)

1 Tbsp soy sauce, reduced-salt (for sauce)

2 Tbsp cornflour (for sauce)

4 Tbsp water (for sauce)

1 beef stock cube, crumbled (for sauce)


Directions:

Heat oil in a frying pan or wok. Stir-fry onion, garlic and ginger for 2-3 minutes. Toss in snow peas and cook for a further 2-3 minutes. Remove from pan and set aside. Add beef and capsicum. Stir-fry until beef is just cooked through.

To make sauce, combine wine, soy, cornflour, water and stock. Pour sauce over beef and capsicum and cook until it boils and thickens. Reduce heat and return vegetables to pan. Cook for 2-3 minutes to heat through.

Variations:

Delicious served with freshly cooked rice. Sprinkle with toasted almonds or cashews before serving, if desired. Serving suggestions are not included in nutritional information.
