
Beef and Pumpkin with Noodles

Ingredients:1 Tbsp oil 2 Tbsp grated fresh ginger 1 Tbsp sherry 1 Tbsp soy sauce 400 g diced lean beef 1 leek, thinly sliced 2 cloves garlic, crushed 2 cup diced, cooked pumpkin 2 cup sliced runner beans 2 tsp cornflour 1 cup water 200 g Hokkien noodles, cooked Directions:Heat oil in a wok. Add ginger, sherry and soy sauce. Add beef. Stir-fry until beef is tender. Remove. Add leek and garlic to wok. Stir-fry for 1 minute. Add cooked pumpkin and beans. Stir-fry for a further 3-4 minutes.
