A new twist on an old standby for a nice quick lunch or dinner!

Ingredients:

1 Tbsp oil

1 onion, chopped

1/2 tsp ground coriander

1/2 tsp ground cumin

250 g minced beef, extra trimmed

2 ripe tomatoes, chopped

1 cup sliced mushrooms

1 green capsicum, sliced

4 flour tortillas or lavash bread

3 nashi, cored and finely chopped (for salsa)

2 spring onions, finely sliced (for salsa)

1 red chilli, finely sliced (for salsa)

1 Tbsp freshly chopped coriander (for salsa)

3 Tbsp lemon juice (for salsa)


Directions:

In a bowl, combine nashi, spring onion, chilli, coriander and lemon juice. Mix well. Chill in refrigerator.

Heat oil in a frying pan. Add onion and spices. Cook until onion is tender. Add beef. Cook for 5 minutes. Add tomatoes. Cook, stirring often, for a further 5 minutes. Add mushrooms, capsicum and pepper. Cook for 5 minutes or until vegetables are just tender. Remove from heat.

Divide beef mixture into four even portions. Spoon mixture onto lavash bread. Roll up like a parcel. Repeat with the remaining mixture and bread. Place on a lightly greased baking tray. Place in 180°C oven to heat through only, about 5 minutes.

Serve immediately topped with nashi salsa and accompanied with shredded lettuce and light sour cream.
