Ingredients:
12 small flat mushrooms
1 olive oil spray
4 beef schnitzel steaks (about 150g each)
1 salt and freshly ground black pepper
2 Tbsp olive oil (for chermoula)
1 lemon, rind finely grated and juiced (for chermoula)
2 tsp ground smoked paprika (for chermoula)
1 tsp ground cumin (for chermoula)
1 tsp ground coriander (for chermoula)
1/4 cup flat leaf parsley, finely chopped (for chermoula)
1/4 cup fresh coriander, finely chopped (for chermoula)
Directions:
To make the chermoula, combine the seven ingredients marked "for chermoula" in a bowl. Mix well. Cover and set aside.
Preheat barbecue plate on high heat until hot. Spray the mushrooms with olive oil cooking spray and season with salt and pepper. Place onto barbecue plate and cook for 1 - 2 minutes each side or until just tender. Remove to a plate, cover.
Spray both sides of the steaks with olive oil cooking spray and season with salt and pepper. Cook 1 minute each. Cut steak in half, place onto serving plates. Top with 3 mushrooms and a dollop of chermoula.
Variations:
