Ginger bread men make an excellent home-made gift for Christmas.

Ingredients:

3 Tbsp margarine, softened

1/4 cup brown sugar, packed

1 egg

1/2 cup reduced fat milk

2/3 cup golden syrup

2 1/4 cup white self-raising flour

1 cup wholemeal self-raising flour

1 1/2 Tbsp ground ginger

1 dried fruit and nuts to decorate


Directions:

Place margarine and sugar in a bowl and mix until well combined. Stir through egg. Add milk and golden syrup.

Sift flours and ginger, add to mixture. Mix until a dough forms. Lightly knead on a floured board, roll dough to 1 cm thick on a floured board.

Using a cookie cutter, cut out gingerbread shapes. Decorate with dried fruit and nuts. Bake in a moderate oven, 180°C, for 15-20 minutes, or until golden.
