Ingredients:
1 1/2 cup self-raising flour, sifted
1/2 cup caster sugar
2 ripe bananas, mashed
125 g Logicol spread, melted
1/2 cup lowfat milk
2 eggs
Directions:
Preheat oven to 180°C.
Place all ingredients in a food processor. Process for 2 minutes or until smooth. DO NOT OVERMIX.
Pour mixture into a 10cm x 20cm loaf tin that has been sprayed with Gold'n Canola Spray. Bake in a moderate oven (180°C) for 25 to 30 minutes.
Cool in tin for 5 minutes. Turn out onto a wire rack to cool completely.

Very moist and yummy, not overly sweet. Made it a few weeks ago with strawberry yoghurt, used honey this time, couldnt tell a whole lot of difference. Will def make it again and again...
By: beccaboo - 2008-10-15 Great loaf, and so easy. I reduced the fat grams to 0.9!!! I replaced the melted butter and 1 of the eggs with half a cup of honey buzz yoghurt delite. Was ever so tasty and 7 grams less fat! My whole family are always at me to make it and now half my work mates make it too!
By: lizmuir - 2008-09-21 I also took 45 min though I used wholemeal flour & made 2 loaves with double the recipe. Maybe used extra banana too.
By: aussielas - 2008-06-01 Very nice... took 45 minutes however, as i used 3 bananas instead of 2.. Used normal canola margarine also and added an extra 50ml''s milk. Turned out light & fluffy & golden though
