Ingredients:
1/4 cup butter or margarine
1 egg
3 Tbsp orange juice (100 %)
3/4 cup plain flour, sifted
1/4 cup rolled oats, uncooked
1/3 cup Equal® Spoonful (or 8 packets Equal® Sweetener)
1/4 tsp bicarbonate soda
1/8 tsp cream of tartar
1 tsp grated orange rind
1/2 cup dried cranberries
1/2 cup chopped walnuts
1/8 tsp salt
Directions:
Beat butter in a medium bowl. Beat in egg and orange juice.
Mix combined flour, oats, Equal, bicarbonate soda, cream of tartar, salt and orange rind into creamed mixture until blended. Stir in dried cranberries and chopped walnuts.
Line a baking tray with baking paper. Drop teaspoons onto baking tray. Bake in preheated 190°C oven for 8 to 10 minutes, or until bottoms are lightly browned. Remove from baking tray and cool completely on wire rack.
