Ingredients:
1 cup plain flour
1/2 cup self raising flour
1 cup Equal Spoonful
1 Tbsp ground ginger
1/2 tsp mixed spice
2 tsp preserved ginger, chopped
4 Tbsp polyunsaturated margarine, melted
1 Tbsp treacle (or golden syrup), warmed
1 egg
1 Tbsp low-fat milk
1/2 cup light cream cheese
1 tsp ground ginger (extra)
1 tsp orange rind, grated
2 mL few drops vanilla essense
Directions:
Preheat oven to 190°C.
Line oven trays with baking paper. Sift together all the dry ingredients, then add the chopped ginger. When the
margarine has cooled slightly, beat in the treacle, egg and milk and pour into the flour mixture. Mix quickly and lightly until mixture forms a firm dough.
Place teaspoonfuls on prepared trays and press down gently with a fork dipped in flour. Bake for 12-15 minutes or until golden brown. Allow to cool on wire rack.
To make Cream Cheese Spread, beat together the
ingredients until light and creamy. When the biscuits are cold, simply spread between two biscuits to make a sandwich. Store in sealed containers in a cool location.
