Fruit Salad Dessert Cake

An enticingly simple cake.

Suggestions:

Lightly dust with icing sugar and serve with cream (optional).

Ingredients:

50 g butter

50 g caster sugar

1 large egg, 53g

50 g ground almonds

2 Tbsp plain flour

1 Tbsp Amaretto Liqueur (or a few drops almond essence)

1 Tbsp icing sugar for dusting

1 tsp ground cinnamon

450 g can Golden Circle Chunky Fruit Salad in Natural Juice, drained


Directions:

Preheat oven to 180C. Grease 18-20cm shallow cake or flan dish.

Cream butter and sugar together until pale and fluffy.

Beat in the egg, almonds, cinnamon, flour and liqueur until smooth. Turn the mixture into prepared pan.

Smooth the surface and attractively arrange Golden Circle Chunky Fruit Salad pieces over the top.

Cook for 35-40 minutes or until light golden brown.

Leave to stand for 1-2 minutes and serve from dish.
