Suggestions:

Decorating tips: Before baking - sprinkle with hundreds and thousands, or insert pecan halves, or top with chopped nuts. After baking - spread with icing, then add sprinkles, nuts etc. (Allow extra calories for decorations.)

Ingredients:

3/4 cup plain flour

1 cup Equal® Spoonful (or 24 packets Equal® Sweetener)

1/2 cup dark chocolate chips

6 Tbsp cocoa powder

1 tsp baking powder

1/4 tsp salt

6 Tbsp butter or margarine, softened

1/2 cup unsweetened apple puree

2 eggs

1 tsp vanilla extract


Directions:

Preheat oven to 175°C.

Combine flour, Equal, chocolate chips, cocoa powder, baking powder and salt. Beat butter, apple puree, eggs and vanilla until blended. Stir in combined flour mixture until blended.

Fill foil or paper cup lined miniature muffin trays with approximately 1 slightly rounded teaspoonful of dough. Bake in preheated oven for 10 to 12 minutes or until wooden skewer inserted in centre comes out clean.

Let cool in trays for 1 to 2 minutes. Remove from trays and cool completely on wire rack.

I thought the calories in these were quite high so checked them in calorie count recipe analysis, it came out with 63 calories each for 24 mini muffins.
