Try this delicious treat, which uses Equal® for a 31% calorie reduction from the traditional recipe.

Ingredients:

2 50g eggs, slightly beaten

1 cup Equal® Spoonful (or 24 packets Equal® Sweetener)

6 Tbsp light margarine, melted

1 tsp vanilla

1/2 cup plain flour

1 tsp baking powder

1/4 tsp salt

1/2 cup toasted flaked coconut

1/2 cup chopped walnuts

1/2 cup seedless raisins or sultanas


Directions:

Beat eggs and Equal in medium bowl. Mix in margarine and vanilla essence. Combine flour, baking powder and salt. Stir flour mixture into egg mixture. Mix in coconut, nuts and raisins. Spread batter in lightly sprayed 8-inch square baking pan.

Bake in preheated 175°C oven 18 to 20 minutes or until a wooden skewer inserted in center comes out clean and top is golden. Cool completely on wire rack. Cut into bars.

Store in airtight container at room temperature.
