Suggestions:

Substitute any other citrus fruit for the oranges in this recipe.

Ingredients:

2 large oranges

1 cup ground almonds

1 tsp baking powder

1/3 cup rice flour

5 eggs (50g)

1 cup caster sugar

1 juice and rind of 2 oranges

1/2 cup caster sugar

2 Tbsp margarine (for greasing pan)


Directions:

Roughly chop the unpeeled oranges. Remove any seeds. Place the oranges in a blender or food processor and blend until smooth.

Combine almond meal, baking powder and flour.

Whisk eggs together with caster sugar for 3 minutes until light and fluffy.

Add egg mixture and blended oranges to the dry ingredients. Mix well. Pour batter into a greased springform tin. Bake for 45 minutes at 180oC.

Place juice and rind into a saucepan with extra sugar. Bring to the boil for 3 minutes.

When cake is baked, pour the syrup over it. Allow 15 minutes for it to absorb. The cake can be iced, if desired.

Absolutely Delishous!! Easy to make! Pour syrup AFTER cake is out of pan, otherwise it will not come out =) I learnt the hard way. Enjoy!
