This decadently moist chocolate treat really takes the cake!

Ingredients:

300 g silken tofu

1/4 cup honey

1/2 cup brown sugar

1 1/3 cup reduced fat milk

2 1/2 cup self raising flour

1/2 cup cocoa

1 cup chopped pitted dates

1 cup chopped pitted dates (for icing)

1 Tbsp cocoa (for icing)

1/2 cup water (for icing)


Directions:

Place tofu, honey, brown sugar and milk in a food processor, blend until smooth.

Sift the flour and cocoa together. Fold the flour, cocoa and dates through tofu mixture, pour into a lined 20cm round cake tin. Bake in a moderate oven, 180°C, for 1 hour or until cake is cooked when tested with skewer.

When the cake has cooled, spread it with the icing.

To prepare chocolate icing: place dates, cocoa and water in a small saucepan. Bring to boil. Reduce heat, simmer covered for 2 minutes, then blend in a food processor.

Variations:

Soy milk may be substituted for cow's milk.
