Low-fat, easy to make muffins.

Ingredients:

1/4 cup sugar

1 1/2 cup white flour

1/2 cup chocolate chips or melts

1/2 cup blueberries

2 tsp baking powder

1/4 cup oil

1 1/2 tsp vanilla essence

2 eggs

1 1/4 cup low-fat milk


Directions:

Preheat oven to 180C and lightly grease muffin tray. Place sugar, flour, choc chips, blueberries and baking powder in a bowl.

Mix together liquid ingredients then add to dry ingredients. Mix gently to combine and place spoonfuls into the muffin tray.

Bake for 15-20 minutes until golden brown and cooked through. Delicious still warm from the oven!

Variations:

You could substitute 1/2 cup glace cherries or 24 fresh stoned cherries for the blueberries.

these were so yummy. i added a little less oil though and they turned out fine!
