Ingredients:

1 1/2 cup oats

1 1/2 cup fresh apple juice

2 tsp vanilla extract

1 1/2 cup wholemeal flour

3/4 cup sugar

2 tsp baking powder

2 medium apples, grated with skin

1 tsp ground cinnamon

4 egg whites, beaten to soft peaks

12 apple wedges to garnish (optional)


Directions:

Preheat oven to 170°C.

Soak the oats, apple juice, sugar and vanilla for 30 minutes. Mix in the flour, grated apple, cinnamon and baking powder. Fold in the egg whites.

Spoon into muffin tins. Bake for 25 to 30 minutes or until muffins are cooked through and golden. Cool and serve.

Variations:

If desired, decorate each muffin with a thin wedge of extra apple prior to cooking.

I made these, fast, easy and delicous. I added 1 cup of cooked quinoa, some walnuts (1/2 cup) and raisins (1/2) cup. This gave me 24 small muffins. As I didn''t increase the sugar they were not very sweet but I find muffins too sweet but still good to eat.

Has way too much vanilla extract in it. I don''t rate these high.

Fantastic, swapped the sugar for half sugar and half honey... yummm
