Soak the oats, apple juice, sugar and vanilla for 30 minutes. Mix in the flour, grated apple, cinnamon and baking powder. Fold in the egg whites.
Spoon into muffin tins. Bake for 25 to 30 minutes or until muffins are cooked through and golden. Cool and serve.
If desired, decorate each muffin with a thin wedge of extra apple prior to cooking.

I added 1 cup of cooked quinoa, some walnuts (1/2 cup) and raisins (1/2) cup. This gave me 24 small muffins. As I didn''t increase the sugar they were not very sweet but I find muffins too sweet but still good to eat.
