Fresh, spicy avocado dip. Delicious with vegetable crudités or low-fat crackers.

Ingredients:

1 ripe avocado

1 small red onion, grated or very finely chopped

2 tomatoes, de-seeded then finely chopped

2 Tbsp lemon juice

2 Tbsp finely chopped coriander leaves


Directions:

Mash together first four ingredients. Pour into serving dish and sprinkle with coriander leaves. Best served immediately.
