Ingredients:

2 Shepard avocados, stones removed, flesh roughly chopped

1 Tbsp light sour cream

0.24 cup chopped coriander

1 small clove garlic, crushed

1 pinch cracked pepper, to taste

2 tsp lemon juice

1/2 Lebanese cucumber, seeds removed, finely chopped

1 small vine ripened tomato, seeds removed, finely chopped


Directions:

Place the avocado in a bowl and mash with a potato masher or fork until just smooth.

Add the sour cream, coriander, garlic, salt, pepper, cucumber and tomato and stir until combined.
