Smoked Salmon Bites

75 g extra-light cream cheese
1 Tbsp mint, finely chopped
1/2 tsp finely grated lemon rind
1 pinch cracked black pepper, to taste
100 g Tzatziki-flavoured Pitos pita chips
50 g smoked salmon
Place the cream cheese, mint, lemon rind and pepper in a small bowl and mix until combined.
Lay the pita chips out on a flat surface and place a small spoonful of cream cheese mixture on each chip.
Cut the smoked salmon into small pieces and place on top of the cream cheese mixture. Transfer the pita chips to a serving plate and serve immediately.
Substitute Sweet Chilli and Sour Cream flavoured Pitos for the Tzatziki flavoured Pitos, if desired.
You could also use the same ingredients in this recipe to make a dip. Simply chop the smoked salmon and fold into the cream cheese mixture. Serve as a dip, accompanied by the Pitos chips.

this is very similar to a recipe I use, only I serve it on sliced cucumber, fresh & crunchy mmmm.

this is a great recipe, I did mix the salmon with the cream cheese and used it as a dip, and I left out the mint.
