This is a simple, yet impressive dish, great as an entree.

Ingredients:
12 fresh Australian asparagus spears
1 Tbsp olive oil
4 g sea salt
1 pinch cracked black pepper
100 g sliced smoked salmon
1 lemon, cut int o wedges
Directions:Preheat oven to 200C.
In a bowl, toss the asparagus with the olive oil, a good pinch of the sea salt and a pinch of freshly ground black pepper.
Lay the asparagus on a baking sheet and roast in the preheated oven for 10 minutes.
Transfer the asparagus to a warmed serving dish and arrange the smoked salmon over the spears. Serve with lemon wedges.
