Ingredients:4 Ruby Lou potatoes (136g each), microwaved 3 rashers 97% fat-free bacon, chopped 1/2 cup low-fat cheddar cheese, grated 1/2 cup low-fat mozzarella cheese, grated 4 Tbsp mild salsa 3 Tbsp light sour cream 2 spring onions, finely chopped Directions:Cut each potato in half and then in half again lengthways.
