Ingredients:

1 coat of olive oil spray

3 Ruby Lou or Royal Blue potatoes, par-boiled and sliced

1 small red onion, sliced

3 baby eggplant, sliced

1 red capsicum, seeded and cut into squares

1/2 cup Italian salad dressing, reduced-fat

1 lemon, rind and juice

4 sausages, grilled (thin 50 g)


Directions:

Place all vegetables in a large bowl. Add dressing and toss to coat. Preheat the barbeque and spray with a little oil. Drain vegetables. Grill until tender.

Serve on a large platter with grilled sausages. Drizzle with dressing, lemon rind and juice.

There are many sausages availiable. I''ve bought extra lean varieties from coles. The ones that are really bad are the cheap thin variety just don''t buy those ones. Butcher made ones are ok too as they use real meat not sausage mince.

I used Kanga Banga sausages to reduce the fat and calories. It was great as I felt like I was being bad, but with none of the guilt.

Surely sausages are not ideal with such a high fat and salt content? Wouldn''t this be better with lean grilled meat (with perhaps some marinade for extra flavour)?
